This week marks my first year owning a pizza shop in Norfolk, VA! One thing that has been killing me and my back-of-house employee is how dreadfully hot it gets in our small kitchen. We’ve thermed our shirts and they come in at 105 degrees. We upgraded ovens since last summer and the new oven takes up probably 2/5 of the kitchen. There is no AC in the kitchen directly, we have a hood, and there’s a connected dish pit with a mounted AC unit (but usually there’s a 15-20 degree difference between the dish pit and the kitchen). Thankfully, our dining area is not impacted by this, but it grinds me and my staff, especially when busy. I would love to hear any tips or solutions that have worked for you or have heard works for others.
