Thank you!  I’m still not sure what over proofed is in general. 

3/4 of our family enjoy a crispy, charred pie.  Not too much of course, but this was was not ideal for my tastes. I wouldn’t turn it down.  It was great.

That said, I appreciate the comments.  I take absolutely no offense to criticism.  If you see mistakes, please feel free to make suggestions.  I do not know enough to know what I’m doing wrong.   

That goes for everyone else as well.  I’m here to learn.  I know there are many masters on this site.  That’s what drew me here.
