Craig that’s acceptable for me, I don’t mind that kind of char.  Mine have turned out this way which I think is a little too much, even though it doesn’t taste burnt, it has a bit of a stronger flavor compared to the golden color.

I had that happen to me too when I’m not closely watching the bottom.  It’s the window between that type of bottom and what Craig posted that’s easy to miss. I can get a pretty even bottom on a steel if I lower the temp to 525.
