Mike is 100% correct that using the oven’s calibration feature is NOT a hack. A hack, by definition, is something that causes an oven to operate outside of it design parameters. Oven hacks such as isolating or defeating the temperature probe or cutting the locks so you can bake on the cleaning cycle allow you to use the oven outside of the safe operating parameters and create a serious safety hazard. This is not the case when adjusting the calibration – this is exactly why there is an upper limit to the adjustment.
I also 100% disagree with the assessment “about the only thing this hack does is get one *slightly* closer to a Neo-NY bake without actually getting there.” I can’t think of a single person posting here that has ever suggested that as a reason to adjust calibration. The thought of Neo-NY never crossed my mind when trying to get to a 6ish min bake. That’s where I like my home oven pizza, and I’m not getting there at 550.
