40% biga cooked in pizza party bollore

1. WMLM mozzarella with sauce on top (oven too hot for this one)
2. Mozzarella, mushroom, parmigiano, black pepper, and post bake truffle oil
3. 70/30 mozzarella/ smoked mozzarella, rapini sauteed in oil, garlic and chili, sausage, and EVOO (pre and post bake)
4. Mozzarella, sliced fennel, and EVOO with post bake capocollo, pecorino, black pepper, and fennel fronds.

Was worried about #4 because I don’t care for licorice flavor and the fennel smelled strong of anise, but this pizza turned out really good. Will make again.
