Pie 1:
ADY yeast 24 hr cold proof, 59% hydration, AP flour, 60ish second bake time

Pie 2:
Sourdough pie, 24 hr room temp proof and 24 hrs in the fridge, 59% hydration, OO flour. 100ish seconds bake time.

First bake was 900 F and charred a bit more than desired and also the crust caught fire in two places in the last 2-3 seconds :)
Second bake was at 850ish and came our perfectly.
