I really like the flavor of Galbani.  I have a better handle on controlling cheese melt now.  I’m going to revisit a few cheeses I’ve really liked in the past.  Galbani is one of them.  The other is Great Value, Walmart’s brand.  I really like the Walmart WMLM mozz.  It’s the cheapest I’ve found as well. 

Take that with a grain of salt.  I’m one bad melt away from feeling like I’ve never done it before. 

The walmart whole milk mozzarella is definitely a sleeper cheese.  We have them in 1lb chubs and 1lb blocks.  The blocks aren’t as firm but both punch well above their price tag.
