Re: Frustrated Pizzeria Owner – Looking for feedback

We have some 1200+ 4.4 star review shops in my town which is marginally smaller than yours (9-10k depending on the season).  We are off the interstate, so we get a lot of travelers.  Big menu at our local Mexican fast casual (think chipotle on steroids).  You would think it wouldn’t be as good but they have it all figured out.  Fresh ingredients, good flavor (not too salty), fast service, and reasonably priced.  If I ever want a quick burrito or queso, I go there.  I don’t even think about it, it’s my top choice.  They already have my money before I make a decision.  I’m not the only one.  Thousands of my neighbors feel the same way.

What quality ingredients are you using?  Is it a quality food service cheese like grande or saputo?  Are you using quality flour like all trumps or similar?  Are the tomatoes the best quality you can find?
