Also forgot to mention, if you just use a Bosch universal style mixer to start your dough and get everything incorporated you can then very easily switch to hand mixing. This sounds strange since you want to by a mixer, but the bowl comes off of the machine itself which makes it really easy to make dough. Most spirals can’t do that.
Pull bowl off, put on scale, add everything, back on machine, turn it on for 1 minute. At that point give the dough a 20 min rest. Then you can hand mix and you did this all very quickly without making a mess and getting your hands sticky. I think this is good for pizza makers to learn the feel of the dough to know when it is strong enough and you will probably make some of your best dough by learning to properly hand knead.
