Re: Today’s Bread

We lost a giant in the bread bKing world here today. Tim Foley, former owner and head baker who, together with his wife Pat who ran pastry, bought and operated Bit of Swiss Bakery since 1987.

After coming up just short in the World Cup of Baking twice in Paris, Tim managed the team that won first place in 2005. The Foleys sold the bakery to two employees about 2 years ago, which ket them enjoy life and concentrate on their restaurant venture Bread + Bar.

Interestingly Dieder Rosa, who Peter mentions often, helped coach that team when they held practice sessions across the country. Brian Spangler trained under Dieder too, IIRC.
