Certainly not opposed to skipping a step or having more fat on the pizza.

Seems more hassle to freeze raw sausage mix for easy use on future pizzas than to cook sausage mix for easy use on future pizzas.

It adds 5-6 min to the job. I mix it in 1to 1 1/2 pound batches. I lay out several small pieces of Saran on the counter. Weigh out balls of mixed sausage at 2 to 3 oz. Save one of whatever size I want for that night’s pizza. Roll the Saran pieces up tight and place them all in a ZipLoc freezer bag. When I go to use them they thaw very quickly. 60-75 min at room temp or 10 min on each (of 2) sides over downdraft range fan.
