More par- and final pan bakes. Getting closer. Relented yesterday and threw a pinch of cake yeast in the mix, forsaking the Sourdough God and relinquishing my place in heaven. It super overproofed but I know exactly why and it was otherwise very good. Flavor was definitely muted but still pronounced tanginess.
