Salt flavor is good. Suprisingly theres a tang i was not expecting because this cheap Hydrolyzed soy protein sauce doesnt have that with a straight taste test. I think it was from the 3 hour hickory cold smoke. I will have to take another taste test tommorow when the smoke flavor mellows out. Non the less it was good. Still needs work though. Not quite like Pawnee Bill. I think i need a more diluted soy sauce, Maybe a another TBSP of brown sugar, but keep the same salinity. The salinity seems spot on.
