yea on top is aesthetically pretty pleasing.  one of my main issues with this whole pizza thing is really just dialing in consistency, not necessarily in quality but just in how the pizza looks, especially a plain pie.  soemtimes i do sauce under, sometimes upside down and for awhile i was doing a sort of mix, with most of the sauce under the cheese and then some random dollops on top.  i am trying to put myself in the shoes of “if i had a shop, what would my plain pie look like” and sometimes i dont know.  sometimes i think it will always be a little different. i can be very indecisive…

to add another example to this is that i always used to add basil post bake and lately ive been adding it prebake, and sometimes pre and post bake.  am overthinking everything? maybe, probably but also these things matter
