Its a 5qt KA not a commercial one. Last night spinning 900g of 55-65 dough i let it go for 10 min on low then heard a big wracket and it was siezed up.
55%-65% hydration? That’s not very precise. Kneading a 55% hydration dough is quite a bit harder on a mixer than a 65% dough. Commercial mixers specify amount of flour at a certain hydration in their capacity specifications. Kitchenaid seems to have all but stopped promoting making bread dough for their home mixers and not offering any advice for bread making at all now when they did before.
