Can anyone speak to thermal recovery of the 70×70 and how many pizzas/hr you can comfortably put out at high temp fast cooking times? If the oven was pre-heated to saturation and the fire was well maintained, could you host a pizza party and, for exapmle, cook 20 pizzas in an hour that others are preparing?

Not a an owner of this oven, but in my experience no oven with no amount of thermal mass can bake more than 4-5 pizzas one after another in the same spot with no recovery. Each pizza removes more heat that can be replaced by the fire, and however much thermal mass you have, the heat will not move to the cooler spot fast enough.

The only way to bake that many pizzas in an hour is to have a floor large enough that you can alternate the baking position: one part of the floor is cooling off when baking a pizza, the rest is exposed to the heat and recovering, ready for the next pizza.
