Can anyone speak to thermal recovery of the 70×70 and how many pizzas/hr you can comfortably put out at high temp fast cooking times? If the oven was pre-heated to saturation and the fire was well maintained, could you host a pizza party and, for exapmle, cook 20 pizzas in an hour that others are preparing?

I’m not 100% sure but I estimate 12-15 pizzas per hour from any 1 spot in a pizza oven that is one of the thinner ooni models. A thicker stone should be able to do that with less temperature fluctuation.
