Imho, internal ventilation is neither needed, nor easy to do. None of the top rated electric pizza ovens has an internal fan, and building a fan that can survive 500C is non-trivial. With a good enough pizza stone and a well designed heating element, there will be no cold/hot spots.

What you will need is a cooling fan between the insulation and the outer metal. Insulation only slows down the heat transfer, doesn’t stop it. Without a fan to cool off the enclosure, the outer metal will be hotter than 150-200C, making your oven extremely dangerous. All electric ovens have a way to cool off the enclosure (mostly with a fan)

Also, an Arduino by itself cannot control the heating elements, you will need beefy SSRs controlled by the Arduino. Most SSRs available on eBay/Amazon are cheap Chinese junk with inflated specs. In theory you could use a 20-25A SSR for that type of heating elements you will need, but with Chinese SSRs you don’t really know what you get. Be prepared to spend serious money for a high quality …
