I have the volt and the balance dial is mostly a good thing except that it takes longer to bake NY style compared to an oven with two separate thermostats that can recharge the bottom stone by detecting how low the temp is. Balance dial is way better for neapolitan.
The breville so far is the only oven that I have seen regular reports of the oven dying. The volt is too new but it is a much simpler design.
