When we moved to Reno, NV, and opened our pizzeria I could not get bromated flour., which I have used all my life.  CA banned it years ago and they consume most of the flour in the west so GM will not sell any out our way.  I talked to the west coast GM rep and would have to buy it by the pallet from back home and have it shipped.  That was not going to work $ wise and I was worried about it but found no difference in our bakes.  It will be a jolt, but they will find it out like I did that it is ok without it.
