thumiza’s burritos
During the Summer, I crave Latin food like no one’s business. I have Dust Bowl heritage, so it isn’t specific to being Latino, but I live in California, and we get a lot of great food from south of the border including pupusas, empanadas, and pizza Cubano, but I mainly like eating burritos, so I end up getting a fixation during the Summer so I can eat while dealing with the heat which makes cooking far more difficult. I end up making sandwiches, but I use my cast iron skillets to make burritos, and it really takes it to another level with meats, vegetables, and eggs, so I end up cooking all of the ingredients in the small skillet, and saute the burrito in the large skillet almost like a chimichanga, making currently breakfast burritos, as they’re the easiest to make, but I know I’ll branch out as the Summer continues.
