I never wipe the steel, problem doesn’t exist if you don’t see it.

30-45 minutes to 550f seems reasonable. 2 hours says I might have an oven problem. How old is it?

Airflow is probably a good thing to have around the steel, although you’d have to test to really know in your oven.

If I use my gas oven I preheat with broil because it’s hot compared to bake.
