I was worried I let this one proof too long.  This one went for almost 5.5 hrs.  It expanded into the lid.  I though it was going to collapse the second I tried to remove the lid.  Shockingly, it did not.  It turned out fantastic as well.  Though I flubbed the press and the launch on this one.  I let it sit for too long on my counter while I searched for a utensil to spread the base.  Ugh!  Still worked out.  My wife also commented on how well the crust turned out.   It pretty much ended up being all crust.  

I’m going to try to replicate these.
