So far the machine looks and functions great. Very silent. I’ve done a 1kg flour batch of dough at 63% hydration and I had some issues with the dough climbing the spiral but I’m sure this was my problem. The recipe was a 100% biga recipe with a 1022g flour, 540g water@24C and 2g ADY left 16h on the counter.
I added the biga in the mixer and added 22g of salt the slowly dripped 100g of water. I think my Biga was too warm to start as I started my mix at 24C. Next time I will refrigerate the biga one hour before making the actual dough.
I think I also added the water too quickly at the beginning.
But the KYS Probaker 7+ felt great. Keep in mind this is my first spiral mixer so I cannot compare, but this is day and night vs my old kitchen aid!
Next time I will do a 2kg flour batch to see if it helps 😊[/q…
