NYC isn’t popular because of the water.  It’s because the level of competitiveness has raised the bar for what is acceptable.   If you were to open up a ramen place in Tokyo Japan, you’d need to be good.  Or else you’ll lose to the 100+ ramen places that are good.

I think it’s too easy to blame things that are out of our control (i.e. geography).
