Re: NY/NH style pies in the Carbon oven

Mike, I just found your thread and worked my way through it. I left a post on there but will say that I am so incredibly happy for you!  Congrats on everything.  You’ve had such an amazing come up and doing all the right things.  Thanks for sharing your journey here with the members and keeping us updated. I am so honored that my ramblings and posts have helped you improved. You’ve worked incredibly hard and it is paying off.  Keep at it and I am incredibly proud of you!   Let me know when you are open again and I will try to make a trip out there.  I’m about 5 hours away.  I’m sure there are many members here who would be interested in making a quick pizza making trip to see you and try your pies.   Again, congrats and keep up the good work. 

PS. the place looks amazing.  And most importantly the pies look awesome as well!
