Re: My Journey Thus Far

Finally, #3.  This was all Baker’s Corner.  Both poolish and final mix.

A total departure from anything I’ve made before.  The clam pie!  I was perusing Youtube and watched a clip of “Really Dough”.  I’ve never seen this show before.  I loved it.  I’ve recently starting looking up Lucali’s pizza.  I’m guessing that’s why this popped up as a recommendation.  Anyway, I was inspired immediately. 

I used canned clams.  Taking the lazy route.  It was fantastic.  The wife liked it, but didn’t love it. When I make it again I willl use fresh clams. 

I used clams (a mix of whole baby and chopped), a little liquid from the can, EVOO, sliced garlic, fresh parsley, pecorrino.  I could’ve removed it a minute earlier.  I got distracted by the Eagles game. 

The color and texture were almost exactly what I’ve been trying to achieve.  A little too crispy.  I almost nailed it.
