Seems i asked a similar question 13 years ago and Tom Lehmann said it was indeed L-cystenine. Its probably why i get the same result when i buy pizza dough at the grocery store in a pinch.

I guess i will need to work on my dough stretching skills if removing the dough relaxer from my recipe is the only way to avoid it.
