Re: Topping and Baking is 80% of the game

As someone who was baking before i could do long division, I basically feel like there is some leeway with any element but you can’t get any of them too far wrong and succeed. 

I think it’s self-evident that most national chains make a crust, within the style they are selling in, that isn’t awful. 

It may not be a style that you like and that’s fine. It’s almost always gonna be not the best in the style and that’s fine. 

I’m not a big fan of the typical american style but within that style i don’t think that the likes of Costco and Little Caesar’s are actually doing a bad job. 

I think pizza hut deep pan with the whole third of a cup of oil in the pan for a large pizza, done right, is really nice if it’s what you’re craving. I know lots of people think it is gross and excessively oily and that is fine. Sure it’s trash objectively. Or is it. 

None of the three chains i have mentioned so far use the worst cheese or the worst toppings, neither the best. Their sauce is similarly OK not worth writing home about…
