Assuming your bake will turn out well.  I’m glad you didn’t use the mixer so you can report the differences when doing it all by hand.

So far it isn’t looking good, the dough seems very stiff after I balled them. We shall see what happens after 24 hours. I also never have done stretch and folds before so maybe it wasn’t kneaded enough? I am cooking tomorrow and hopefully I didn’t ruin the dough because it feels completely different than my original recipe.
