According to my notes, this is my favorite recipe so far.  These notes are from May.  I’ve tried so many things since I’ll have to revisit to see if I feel the same.

Flour 100% KAAP
Water 68%
IDY .22%
Salt 2.5%

I was full of flavor and a texture that was crunchy yet melted away.  It was mixed by hand with stretch and folds every 45 mins.  It was all room temp.  It was an overnight recipe.  Poolish starts the night before.  Next day final mix and bake. 

Schedule:

7:45pm – mixed poolish.
11am next day – mixed final dough.
2:30pm – after stretch and folds, scale and ball.
6pm – bake

I’m going to revisit it for sure.

Tonights bake is similar, but included an extra day of cold ferment.  I’m also using a different flour.  ADM Commander as opposed to KAAP.  I’ve gotten fantastic texture with the ADM so I think it’s just a matter of dialing everything in. …
