Did you get instructions with the oven?  I got mine second hand without instructions, but also have an Ardore and I want to say this was addressed in the safety notes.  Simone has also commented on this in a few threads – the burner and oven were designed for 11″WC.  30 psi is not recommended and potentially dangerous.
