Re: Baking UNDER a pizza steel to brown the top?

Quote from: easysauce on Today at 02:06:14 PMAs in the subject, we have a small gas oven max 500F – broiler doesn’t work.  Par-baking a pan pizza on the steel.  If I’m getting good browning on the bottom of the crust already, for the final bake, will placing the pizza on the rack under the one with the steel on it help brown the top of the pizza?

I wouldn’t waste the expensive steel for that. You could buy a less expensived pizza stone (check local charity/thrift shops). That’s my set up and it works great in my Viking dual rage electric oven. The other thin you can try is to get some large heavy duty aluminum foil and double it up and make it as big as you steel, and put that on one shelf above where the steel and pizza is Good luck! Life is good!
