I purchased a bag of Rogers bread flour a few years ago, opened it and noticed all these particles in it. I emailed Rogers and they responded

QA confirmed from pictures that flecks were bran that could of got into white because of an issue with the sifters.  I am happy to send you a Freshco gift card to replace this flour.

That would of course not be the case with the pic you posted.

Oh, no problem. So, this means the dough balls I posted from Loulou Pizza Bar definitely used a whole wheat mixture. I’ve met a few pizza makers around here, and they all use three different blends of flour.
