Hi! Adding oil together with water may be useful when using a planetary mixer because the bowl doesn’t spin (dough may have a hard time absorbing the oil). For a spiral mixer, don’t need to mix them together prior to pouring in the dough. Having said so, I don’t see no harm either. As other members mentioned above, it’s better to add oil the last few minutes of the mixing so it doesn’t impact gluten construction, but in case of hand kneading (and planetary mixer as I said above), it’s much easier to add oil towards the beginning. I usually add it once all the flour is wet (porridge-like). As one of my friends and pizza teacher told me before: “3% of oil? No one’s gonna die”.
