Re: Marinara Sauce Using #10 Cans Of 7/11 Ground Tomatoes

I do a soffritto of carrot, celery, & onion.

1x 10# can 7/11
1x small carrot
1x medium sized onion
1x celery stalk
3x cloves of garlic
1x cup of oil split in half
1 tablespoon rock salt
1/2 tablespoon fresh ground black pepper
1 tablespoon oregano ( sometimes I don’t add it, but when it’s marinara I do.)
1x pecorino rind ( if you have )
6 – 7 basil leaves

Dice and blend up the veggies in a blender with 1/2 cup of oil, blend until puréed.

Heat up the other 1/2 cup of oil in a Dutch oven or pot medium heat and once heated at the soffritto and heat for a good 15 – 20 mins, you want it to get a little caramelized color to it. After that time add the 7/11, I like to use a hand blender to make it a smooth but you can leave it as is. Add all the other ingredients ( salt and pepper to your liking, oregano if you want ) don’t add the basil yet, bring to slow boil add the rind and then simmer for an hour after the hour add the basil, slice it or leave it whole if you want.
