This was the last recipe I used.  It was a 3 day process for 3 285g dough balls.

Total Recipe

ADM Commander Flour 100%
Water 38%
IDY .4%
Salt 2.4%
Honey .4%

Day 1: Mix poolish.  Anticipate 20hrs for this step.  Here’s the exact schedule for this particular bake.

2:30pm – mixed poolish.

175g Flour (ADM Commander)
175g Water (80f)
2 g IDY (the entire amount used in this recipe)

Let rest at room temp for 2 hours.  My room temp is pretty consistent so far.  Between 65f-70f depending on which room I use. 

4:30pm – Refrigerate for 18hrs.  I’ve read you can go up to 24hrs.

10am – Remove poolish from fridge and let rest for 1 hour at…
