Well, for me, it comes down to this.
I know plenty of accomplished bread bakers, have even met a few “in the trade”.
The one thing that seems very common is that many think that to make a pizza you roll some bread dough out flat, top it and stick it in the oven. Then they bake on trays for what seems like hours. (But really is maybe 10-20 minutes
)
After years of messing about with extra hot wood ovens and Neapolitan dough, the pizzas they make are OK, but they make me think of loaves of bread with some tomato and cheese spread on top.
That is why I am in the pizza is not bread camp.
Pizza dough is a simple bread dough, with no added extras, of sorts.
