Or, do as Tom suggested. The KISS(keep it simple, stupid) method. 

Salt and sugar in mixer.
Add water.
Add flour.
Add IDY to top.
Mix for 2-3 minutes.
Add oil.
Mix for 7-8 more minutes.
Done.

That’s it. Do that and your dough will turn out every time.
