Re: Chefman/Costco Indoor Pizza Oven

Indeed, my intention is not actually to preheat it to 972, but simply use the rocker switch for 5 minutes before bake so that it’s reliably glowing hot. The 972f quoted is just to show whats possible after defeating the inexplicably bad temp control. My Blackstone process is usually 750 or so deck, and full blast on launch, that’s what I’m looking to replicate.

It is a pid control as evidenced by the fact that it is switching all over the place not just at set temp, but it is not pwm. The board uses relays between line AC and element and is all or nothing.

There’s plenty of insulation in the oven though, the case area where I did the wiring mod stays at a touchable temp when it’s reassembled so I’m not too worried. Most of the heat goes out the top vents and two case fans keep the air gap between insulation and steel moving quite a bit. Regardless, this oven is for my warehouse not my home kitchen, but all warnings about fire and insurance 100% apply for any mod of an appliance like this!

For better safety…
