I’m in Australia so regulations will be different but I am also looking to do similar to you with a trailer. I’ve landed on putting the gas bottles in a lockable cabinet at the tow bar end and housing the deck ovens on top of that facing in (obviously need a “ventilation” window at that end to access the ovens from inside the trailer). This puts the outdoors ovens outdoors so satisfies regulations here. I’m still negotiating with the trailer manufacturer but am hoping to have gas tapes inside that control the flow through to each oven ie turn it up during a bake and down when not being used, without needing to walk outside to do that, although I’m now wondering whether I can just do that through the window….might depend on whether I have a workbench there. Also, as time is $$ and I’m a novice, Im thinking a revolving stone is best as I won’t need to turn the pizzas. A turning stone deck oven usually also has separate heat controls for the ambient oven vs the stone, providing greater control IMO.
