Tonight I continued experimenting with different cheese blends and went with a 50% fresh mozzarella and 50% sharp NY white cheddar blend. I’ve combined low moisture mozzarella and sharp white cheddar before, but the fresh mozz hit different and took things to a whole different place and that place was good. About the only spice on this pizza was a little basil in the sauce and the spices in the pepperoni and this combination of cheeses seemed like it accentuated these spices – a result that was surprising and pleasant. It was quite tasty and I’ll definitely use this combination again.
