Another thing is since I’m pushing 4 kilo right now of flour at 65% and that makes about 2 boxes at 256-275 grams and 24 dough balls I kind of want something that at the minimum won’t just do it better and faster but do double that or 8 kilos of flour per batch.

The Spiralmac seems to clear that threshold at 60% water and can do a bit more at 65% I figure, the Famag on tech sheet can so 6.3 kilos of flour and PleasantHill says 7 kilos of flour per batch.

At 65% hydration can the Famag 10 do 8 kilos of flour at 65% hydration?
