Thanks all for your replies and feedback. What I ideally want is a *set it and forget oven* for 600F bakes of Apizza Scholls method pies. A compact Pizzamaster countertop model being the real dream…The Gozney dome seemed to maybe offer that temp stabilty, but am open to other options. Already have a Ooni Volt and its just okay and too small.
