In short, dough becomes tough and leathery due to a process called starch retrogradation, which occurs more quickly at lower temperatures (fridge). This is why storing pizza slices (or bread) in the fridge accelerates staling and is NOT recommended. Freezing is the best option to preserve quality (it significantly slows down starch retrogradation).
For best results when reheating:
- Wrap individual slices tightly in plastic wrap and store in the freezer.
- Heat the slice in the microwave for 20–30 seconds to ensure even warming and restore some of the crumb’s softness (no need to thaw).
- Finish reheating in a 350F oven for 3–5 minutes to restore the crust’s crispiness.
The quick microwave step ensures no cold spots, softens the crumb, and shortens the reheating time, and the oven restores the crispiness. Although you can reheat solely in the oven, it will take significantly longer, and you might be ending up with cold layers of dough, cheese, or sauce.
