Re: Frustrated Pizzeria Owner – Looking for feedback

Are you frustrated by the lack of dollars or lack of customers?

Just asking b/c looking at the numbers, it doesn’t pencil to me.

$44K/ month @ 21% labor and I assume 30% cost of goods (on the high side) should leave you pleanty for overhead and profit. $44Kx49%= $21560. Where is that going?

It’s the basics- cost of good sold+labor+overhead+profit=sales

If lack of profit is the frustration then perhaps you should be focused on making it work with the sales you have.

For me I have to work backwards. Accuratly predict how much I sell then control the costs to fit. If sales don’t come in as expected I can focus on increasing sales and adjusting expences to new/future estimates.

Budgeting works if you budget what you can afford not what is ‘needed’ for some other reason.

It’s like the old joke, my bank account can’t be overdrawn, I still have checks…

If your feelings are really coming from lack of love/business from guests, that’s…
