Hell bound sticky dough

Hello EVERYBODY, excuse me for my problem but it’s  been making me mad for months.
I can’t get a handle on sticky dough. Ever I would like to make a pizza Canotto and failed
each time. As time is running out of me, it seems to be no chance to make it real. At first
thinking youtube could help i’ve imitated Vito Lacopelli. My dough didn’t like Vito and so i failed again.
So , going to become a looser, I landed here with all of my effort not giving up. Maybe there is a light
